Amy's Crockpot Cinnamon Almonds
1 1/4 Cups sugar
1 1/4 Cups Brown Sugar
3 Tablespoons Cinnamon
1/8 Teaspoon Salt
1 Egg white
2 Teaspoon vanilla
3 Cups Almonds
1/4 Cup water
Grease your crockpot- I used Palm Oil.
In a larger bowl, combine sugars, cinnamon, salt. Stir well and set aside.
Whisk egg white and vanilla together until frothy, add in nuts. Stir until all nuts are coated.
Mix nuts into the sugar mixture. Pour into crockpot- heat set on LOW.
The nuts will cook for 3 hours total and unfortunately- you must be home because you have to stir it every 20 minutes. After 2 hours pour in the water and mix WELL, this is what gives the nuts the crunchy coating that will make them irresistible!
Once the 3 hours are up, pour mixture onto a cookie sheet, the cookie sheet needs to have a lining- I used parchment paper, wax paper should work well too! Once all the nuts are out of the crockpot break apart any pieces while the nuts are still hot, this will prevent huge clusters of nuts and you will have nice pieces. These are awesome gifts or just to snack on. Store in an airtight container.
