Avocado Aoili Dressing - GFCFSF

1 avocado
1 egg yolk
1 clove garlic
2-3 tablespoons water
juice of 1 lime
salt and pepper, to taste
1/2 cup safflower/sunflower (or other low flavor oil)

Remove skin and pit from avocado. Place in blender. Add in egg yolk, garlic clove, lime juice, 2 tablespoons water and 2 tablespoons oil. Blend for 30 seconds, then stream in the rest of the oil with the motor running. If it's too thick, you can add more water. Season with salt and pepper. Great as a dip or dressing.
