Avocado Corn Fritters with Chipotle Aioli - GFCFSF

2 cups GF flour mix
1¾ cup organic cornmeal
3 tablespoons baking powder
3 teaspoons salt**
4 eggs
2 cup CF milk
8 oz Daiya Jalapeno Garlic Havarti Style Wedge, diced
1 cup (2 ears) roasted/grilled corn kernels
½ cup red bell pepper, diced
½ cup red onion, diced
1 jalapeno pepper, seeded* and diced
1/4 teaspoon Ancho Chile Powder (*if you don't have this, leave the seeds in the jalapeno for heat)
3 avocados, diced (You want to use these the day before they are perfectly ripe so they don't smoosh)
1 cup bacon, cooked crispy and chopped (optional) **if you add the bacon, decrease salt above by half**
Oil for frying

Pour 3" of oil into a deep fryer or a heavy skillet and heat to 350º.
In a large bowl combine flour, cornmeal, baking powder and salt. Stir to combine. Add eggs, milk, cheese, corn, onion, peppers and cilantro. Stir to incorporate. Gently fold in avocados.
Scoop batter into heaping tablespoons and gently drop into oil. They are done cooking when golden brown and raise to the top. Drain on paper towels and keep warm in a 200º oven.

Serve with Chipotle Aoili
