Avocado Fries - GFCFSF

Oil For Frying
2 Avocados, FIRM RIPE, not soft
2 Eggs, beaten
1 cup GFCFSF Panko crumbs
1/2 Teaspoon Salt

In a medium-sized bowl, mix together the bread crumbs and salt. Cut the avocados in half and then slice them vertically into 4 inch by 1 inch wedges, giving you 8 slices per avocado. Set them aside. Heat the oil to 350 degrees in a pot, adding enough oil so that the oil is about 2-3 inches deep.

Dredge the avocado slices in the egg mixture, then in the panko mixture. Place them in the hot oil and fry them for about 1-3 minutes, or until golden brown. Remove them with a slotted spoon or tongs, and set them on a plate lined with paper towels to absorb the excess oil.

Allow them to cool for a few minutes, then transfer them to a serving tray and serve them immediately with Roasted Garlic Aioli or another awesome sauce!

Note: I did bake some to see if these could be done with less oil, but the panko was just too hard. If you either ground the panko finer or used GF breadcrumbs from another company, you may be able to do it. If so, cook at 450 for 20 minutes or until brown.
