Baked Egg in Avocado - GFCFSF

1 avocado
2 eggs
2 strips of bacon, optional
Salt and pepper, to taste

Cook bacon, if using, and set aside. Preheat oven to 425 degrees Fahrenheit. Slice avocado in half and remove pit. Crack eggs into a bowl one by one and poor into the indent of the avocado where the pit was. It is likely that the entire egg will not fit in the indent, so discard any excess egg white, or scoop some of the avocado out to make a larger pit. Crumble bacon, if using, and place on top of avocado halves. Season with salt and pepper. Place avocado halves in a tray and into the oven. Bake until the egg white is set but the yolk is still runny, about 10-15 minutes, watching closely after 10 (The egg cooks fast!). Serve immediately.
