Banana Bread - GFCFSF

 

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons xanthan gum
  • 1 teaspoon salt
  • 1-1/2 teaspoon cinnamon
  • 1/2 teaspoons nutmeg
  • 2 cups GF flour mix like King Arthur Gluten-Free Multi-Purpose Flour http://www.kingarthurflour.com/glutenfree/
  • 1/2 cup (8 tablespoons) soft GFCFSF margarine - Earth Balance Soy Free
  • 1 cup sugar
  • 2 large eggs
  • 3 medium very mashed ripe bananas
  • zest from 1 lemon
  • 1/2-1 cup chopped walnuts, optional

Mix banana, sugar, margarine, eggs, zest until well mixed but not smooth.  Add remaining ingredients and mix well.  Grease and flour a bread loaf pan, pour batter in pan.  Smooth top.

Bake at 325 for an hour or until toothpick comes out clean.

Devour. 🙂
