Banana Pancakes with Bananas "Foster" topping - GFCFSF

1 cup Gluten Free Bisquick (or your favorite mix)
2 tablespoons oil (coconut, safflower, sunflower, etc) plus more for frying.
1 egg
1 ripe banana
1 cup milk sub of your choice
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/3 cup chopped walnuts or pecans (optional)

1 tablespoon Earth Balance Soy Free Margarine
2 tablespoons brown sugar
1/2 teaspoon cinnamon
pinch salt
1 ripe banana, sliced

Mix all pancake ingredients in a mixer (not a food processor or blender) until thoroughly mixed. Heat pan with more oil and cook pancakes until done. Set aside.

For topping: In small pan, heat margarine, cinnamon, salt and brown sugar. Stir well and when mixture starts to bubble, toss in banana slices and heat through.

Top pancakes with topping and enjoy!
