Bavarian Apple Cheesecake - GFCFSF

Crust:
1/3 cup sugar
1/3 cup GFCFSF margarine
1 tablespoon coconut oil
1/4 teaspoon GF vanilla extract
1 cup GF flour mix
1/8 teaspoon salt

Filling:
4 cups Granny Smith apples -- peeled and sliced
16 ounces Daiya cream cheese -- room temperature
2/3 cup sugar
1/2 teaspoon GF vanilla extract
2 eggs

Topping:
2/3 cup sugar
2 teaspoons cinnamon
2/3 cup sliced almonds

Place apples in a single layer in a shallow baking pan and cover tightly with foil. Bake at 400*F for 15 minutes.

Mix sugar, margarine, coconut oil and vanilla until well blended. Blend in flour and salt until crumbly. Pat onto the bottom of a 9" springform pan. Set aside.

Meanwhile, for filling, in a large mixer bowl, beat the cream cheese, 2/3 cup sugar and 1/2 teaspoon vanilla till fluffy. Add the eggs all at once, beating on low until just combined. Pour into pan with crust. Arrange apples on top of filling. Combine the remaining sugar and cinnamon. Spread the almonds over the apples and sprinkle the cinnamon/sugar on top. Bake at 350 degrees F for 50 minutes. Remove sides and let cool and rack for 1 hour. Wrap and refrigerate 6 to 24 hours.
