Beef Pho, GFCFSF

1 white onion
2 large slices fresh ginger
4 cups beef bone broth
1 cinnamon stick
1 pod star anise
6 cloves
2 teaspoons fish sauce
1 teaspoon sugar

For serving:
1/2 lb beef sirloin steak, thinly sliced
4 ounces rice noodles
1/2 lime, cut into wedges
Cilantro, thai basil, fresh sliced jalapeño, bean sprouts, fried shallots, and sriracha, to garnish

Quarter and peel the onion. Using tongs, char the onion and ginger over a gas stove on high flame on all sides, or place on a baking rack and broil for 5 minutes until charred. Bring the broth to a boil and add onion, ginger, cinnamon, anise, and cloves. Boil for 30-40 minutes, then add fish sauce and sugar. Strain out solids, then return to heat. When ready to serve, cook beef slices in broth, about 2 minutes, then remove and divide among bowls.

While broth is boiling, bring a pot of water to a boil and add rice noodles. Cook until tender, then divide between serving bowls, or toss with a small amount of oil to prevent sticking.

When ready to serve, poor broth over noodles and beef, then top with lime wedge and garnishes.
