Blackened Fish - GFCFSF/SCD

1.5 lbs wild caught fish (Atlantic cod, etc)
1-1/2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon onion powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon brown sugar or maple sugar
1/4 teaspoon cayenne pepper
2 tablespoons oil to brush on grill

Mix dry herbs and spices in bowl, coat fish evenly. Heat grill pan on high and brush with oil. When the pan starts smoking, place fish on grill and do not touch it for 3 minutes, or until you see the edges have changed color all the way around, and then carefully flip it over and continue to cook until done.

Serve on grilled tortillas with jicama slaw and avocado, if desired.
