Blueberry Muffins - GFCFSF

2 cups GF flour mix
1 tsp xanthan gum
3 tsp baking powder
1/2 tsp salt
1/2 cup sugar
2 eggs
1 cup milk substitute
1/4 cup oil
1 cup fresh or defrosted frozen berries

1. Mix together flour, xanthan, baking powder, salt and sugar.
2. Add in eggs, milk substitute, and oil; stir only until combined. Stir in blueberries.
3. Spoon batter into lined muffin cups, filling each 2/3 full.
4. Bake at 375 degrees for 15-18 minutes or until toothpick inserted in center comes out clean.
Makes 12 muffins.

(Note the photo below, the muffin itself is blue because we used frozen, defrosted, berries instead of fresh. Fresh won't discolor the batter)
