Breakfast Burritos

This is a very versatile recipe as you can use whatever meat you want, whatever vegetables you want, so use the below as a guideline and choose your own favorite ingredients.

1 pound breakfast sausage, bacon, chopped ham (or whatever meat you like)
2 pound of red or yukon potatoes, cubed into bite size pieces
8 oz Daiya cheese
16 tortillas (I used Rudi's Tortillas* this batch, but you can use Food For Life Brown Rice Tortillas too)
12 eggs, extra large
oil or margarine to cook eggs, potatoes and veggies
onion, diced
1/2 red bell pepper, diced
2-4 cloves garlic, minced
Spinach, fresh (cooked down) or frozen (Make sure you dry it out very well so the water won't ruin the tortillas)
salt and pepper

1. Cook potatoes with oil and season with salt and pepper. Set aside to cool.

2. Cook meat, set aside to cool.

3. Cook onions, garlic and pepper together. Set aside to cool.

4. Whip eggs (I use an immersion blender to whip eggs), then cook in a small amount of margarine until soft (do not overcook). Set aside to cool.

5. Take a clean dish towel and get it lightly damp, squeezing out all extra water. Lay it flat on a plate and set tortillas in the center, wrap towel around tortillas to cover. Heat up tortillas until warm but not hot.

6. Working quickly, layer cheese first, then meat(s), eggs, potatoes and vegetables, fold up into a burrito. Continue until all ingredients are used.

I make a large quantity of these at once for a quick grab-and-go breakfast for the kids. If you are doing the same, lay the burritos, seam side down, on parchment lined tray. Place tray in freezer overnight. In the morning, wrap each individually and place back in freezer. To cook in the morning, remove wrapper and place in toaster oven for 15 minutes at 350 (or until hot), or wrap burrito in wet paper towel and microwave for 3 minutes on 50% power.

*Cooks note: the Plain flavor of Rudi's was more pliable and broke less than the spinach flavor.
