Brunch Potatoes - GFCFSF

 

  • 5 medium red, white or yukon gold potatoes (not russet)
  • 1/4 cup onion, chopped
  • 1 clove garlic, minced
  • salt and pepper
  • 1/2 teaspoon paprika
  • oil for cooking

 

Scrub potatoes.  Cut into cubes.  Heat 2-3 tablespoons oil in pan over medium heat.  Add potatoes, stir to coat with oil, cover and let cook 5 minutes.  Stir and recover another 5 minutes.  Repeat until potatoes are soft and browning nicely. Add remaining ingredients, stir and continue to cook, uncovered, until potatoes are crispy and onions are done.
