Caramel-Nut Popcorn - GFCFSF

8-10 cups popped popcorn (I use a hot air popper and non-GMO Eden Organic popcorn)
1 1/3 cup pecans
2/3 cup almonds
1 1/3 cup organic white sugar
1 teaspoon salt
1 cup Earth Balance Soy-Free margarine
1 tsp GF vanilla extract
1/2 cup Lyle's Golden Syrup or Organic Brown Rice Syrup

Put the dry ingredients on the cookie sheet then mix together the sugar, margarine, vanilla, salt and syrup in a medium pot. Melt then boil for 10-15 minutes until the mixture is a light caramel color - 300 degrees F+. Pour mixture over the dry ingredients and mix and spread. Expect to wait 30-60 minutes to harden (I realize this is heartbreaking). Once hardened, break into pieces and serve or store.
