Caramelized Onions - GFCFSF
This is not a fast recipe and can take an hour or so to complete but this can be done in advance and reheats well.
4 sweet onions like Vidalia
1/4 cup oil (olive, canola, safflower, etc.)
2 tablespoons Earth Balance Soy-Free Natural Buttery Spread
2 teaspoons kosher salt
1 tablespoon organic sugar
1 teaspoon dried thyme or 1 tablespoon fresh thyme, optional
Peel and slice onions in 1/4 inch slices. In a pan, preferably cast iron, heat oil over medium heat. Add onions, salt and mix until coated in oil. Cover with lid. Cook until soft, stirring often. The volume of the onions should reduce by about 3/4. Remove lid, add sugar and margarine. Stir well. Cook until browned on one side, then flip, continuing until onions develop a deep brown color. Stir in thyme.
