Cashew Cream - GFCFSF & SCD
Use in place of heavy cream or MimicCreme in recipes.
9 oz raw organic cashews
2 cups water
1/2 teaspoon kosher salt
Soak nuts in water for 3-8 hours. Put nuts, water and salt in blender or food processor and blend on high until very smooth, about 3-5 minutes. Adjust salt if needed and add more water to get the consistency you want. Store in refrigerator 3-4 days or freeze.
You can add vanilla and a sweetener for a sweet cream or a little lemon juice to help cut the sweetness if you want a savory cream.
