Cauliflower "Mashed Potatoes" Puree

Cauliflower "Mashed Potatoes" Puree - GFCFSF


This looks and feels like mashed potatoes, but without the carbs. Don't add water to the bowl when you puree it, as the cauliflower has enough of it's own.

  • 1 head cauliflower, 2 to 2 1/2 pounds
  • 2 cloves garlic, sliced
  • 3 tablespoons Earth Balance Soy Free Margarine (or oil of your choice)
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • pinch nutmeg
  • pinch cayenne pepper (optional)


Remove leaves and core from Cauliflower head.  Chop into 1 inch pieces and place in steamer, with sliced garlic, above water.  Bring to a boil and steam for 15 minutes or until very soft.

Puree in food processor or with a hand blender with margarine.  Season with salt, pepper and nutmeg.  Add cayenne if using.  Puree until smooth.
