Chicken Fajita Pasta - GFCFSF

Cooks in under an hour. Great for weeknights!

1 teaspoon ground coriander
1 teaspoon garlic powder
2 teaspoons cumin
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon chipotle powder
1 teaspoon SMOKED paprika
1 teaspoon oregano
2 lbs chicken breast, cubed or sliced
4 tablespoons oil
20 ounces canned, diced tomatoes
2 whole onions, cut in half and sliced (2 medium onions)
1 green bell pepper, sliced thin
1 red bell pepper, sliced thin
4 cloves garlic, minced
3 Tablespoons GF Liquid Smoke
2 cups chicken broth
1/2 cup coconut milk, from a can
12 ounces dry GFCFSF penne pasta
1 teaspoon salt
cilantro, chopped, for garnish
fresh avocado, chopped, for garnish

In a small bowl, mix first 8 ingredients in a bowl. Coat chicken in 2 tablespoons seasoning mix. Heat oil on high in large pan. When oil starts to smoke, add seasoned chicken in a single layer. Brown on each side and remove to a plate. Add more oil if needed, add onions, peppers, 2 tablespoons Liquid Smoke and remaining spice mix. Stir well, then leave to cook on high for a few minutes to brown, stir and brown other side. You want a decent char on the onions so only stir when the onions are getting dark. Add chopped garlic, stir well and cook one minute. Remove to a plate.

To the pan, add broth, coconut milk, tomatoes, dry pasta and salt. Stir well, once it reaches a low boil, turn it to low, cover and cook 15 minutes. Stir in chicken and vegetables back in with last tablespoon Liquid Smoke. Cover and cook another 5-10 minutes, until pasta is done. Asjust seasoning if needed. Serve in bowls and garnish with chopped cilantro and sliced avocado.
