Chipotle Aioli – GFCFSF

Chipotle Aioli

2 egg yolks
2 cloves garlic
2-3 tablespoons water
juice of 1 lime
1/4 cup cilantro leaves
salt and pepper, to taste
1 chipotle pepper in adobo

3/4 cup safflower/sunflower (or other low flavor oil)

Place first 7 ingredients in blender. Blend for 30 seconds, then stream in the oil with the motor running. If it’s too thick, you can add more water. Season with salt and pepper. Great as a dip or dressing.
