Chipotle Honey Balsamic Glazed Chicken

Glaze

  • 1/3 cup LOCAL honey
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons dried thyme
  • 1 teaspoon canned chipotle pepper, seeded and minced (this is perfect for kids so add more for adults!)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 whole chicken, cut up into 6-8 pieces

 

Preheat oven to 425 degrees.

Remove seeds from peppers to keep flavor but avoid heat. Mix all glaze ingredients in bowl.  Place chicken in pan and brush with glaze.  Roast until chicken is deep brown and cooked through, 40-45 minutes, while brushing with the rest of the glaze 2-3 times until it's gone.  Do not brush more glaze on in the last 5 minutes of cooking since honey can burn.

You could also use boneless skinless breasts on the BBQ grill with this sauce.

Serve with rice and steamed veggies.
