Chocolate Frosting


Chocolate Frosting - GFCFSF

  • 3 cups organic confectioners' sugar 3/4 cup unsweetened cocoa 1 cup Earth Balance Soy Free margarine 4 teaspoons coconut milk1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon instant coffee granules



Sift sugar and cocoa together into a large bowl. Beat margarine and vanilla until pale and whipped. Add in sugar/cocoa mix one cup at a time, whipping to combine. Add in salt, coffee and milk, whip until volume is almost doubled.

Cooks note: the coffee is optional but gives the chocolate a nice taste. Organic powdered sugar is harder to sift than non-organic so be patient.

Spread frosting on top of one round. Top with second round and cover top and sides completely with frosting.  Due to margarine, this needs to stay refrigerated.
