Coconut Milk Rice - GFCFSF
2 cups (1 can) of low-fat coconut milk*
1 cup Organic Basmati rice
1 teaspoon salt
1/4 cup chopped cilantro or green onion (optional)
*If you only have full-fat coconut milk, you can add 1/2 cup of water to the pot and add 1/4 cup more rice.
Rinse rise a few times. Bring coconut milk to a light boil, stir in rice. Lower heat to very low, cover and let sit 20 minutes. Stir in salt, and cilantro or onions, if using, turn heat off. Let sit until you are ready to use it.
