Cucumber Salad - GFCFSF

1 English (aka Hothouse) cucumber, sliced thin
2 tablespoons fresh dill, chopped
3 tablespoons red onion, sliced thin
2 tablespoons White Wine Vinegar
1 large clove garlic, minced
salt and pepper

Use a knife, standard cheese grater or mandolin to slice the cucumber. Place in bowl with remaining ingredients. Mix well and refrigerate until ready to serve.
