Curried Chicken Salad - GFCFSF

 

  • 3 cooked chicken breasts (or the picked off meat from a whole boiled/baked chicken), chopped
  • 1-1/2 tablespoons curry powder
  • 1 cup of red seedless organic grapes (can sub apples if grapes are an issue)
  • 1/2 cup roasted, salted cashews or pecans, chopped roughly
  • 1 cup GFCFSF mayonnaise - Hellman's Canola Mayo is GFCFSF
  • 2-3 green onions, chopped
  • 2-3 stalks of celery, chopped
  • 1 teaspoon apple cider vinegar
  • salt and pepper to taste

 

Mix all ingredients and let sit in refrigerator for 30 minutes (or overnight).  Serve on bread or lettuce wraps/salad.
