Easy Crockpot Chili


Easy Crockpot Chili - GFCFSF


  • 2 lbs ground meat (beef, turkey, bison, etc, your preference)
  • 1 medium onion, chopped
  • 2 lbs of dry red kidney beans
  • 1/2 bell pepper, chopped (green, red, yellow or orange, your preference)
  • 1 28oz can of stewed tomatoes, chopped or whole
  • 1 box of GFCFSF chili seasoning like Carroll Shelby  http://www.amazon.com/Carroll-Shelbys-Original-Texas-4-Ounce/dp/B000H23Z1C (be careful with other brands as they usually contain gluten)


Put beans in the crockpot and cover with water, double the amount of the beans as they will soak up a LOT of water.  Cover with lid and soak overnight.

In the morning, empty the beans into a strainer/collander and rinse, then dump them back into the crockpot bowl. Brown the ground meat.  Add all ingredients to the pot except the SALT and stir.  Cook on high 6-8 hours.  Only after beans are fully soft can you add the salt.

This freezes very well!  Enjoy!
