  • 2 cans of organic unflavored black beans
  • 1 tomato
  • 2 tablespoons chopped cilantro
  • 1 clove garlic, minced
  • salt and pepper


Open and empty both cans, including sauce into pot.  Add the rest of the ingredients.  Cover and cook 15 minutes on medium.

If you don't want to use canned beans, soak 1 pound of dry beans overnight.  In the morning, drain and rinse beans.  Place in pot and cover with water and cook until soft.  Then add the other ingredients and cook as above.

Pour over rice with a grilled pork chop and you have dinner!
