Fig Preserves with Balsamic, Rosemary and Black Pepper - GFCFSF

 

  • 2 cups of chopped fresh figs
  • 3 tablespoons Balsamic Vinegar
  • 2 tablespoons honey (or equivalent sweetener of your choice)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 sprig of rosemary, rinsed

 

Rinse figs, cut off stems.  Rough chop and place into a saucepan with all of the remaining ingredients.  Stir and cook on medium heat, stirring occasionally.  When figs are very soft, remove rosemary and discard, turn off the heat and process briefly with a hand blender or in a food processor until it's the consistency you want. Recheck seasonings and sweetness.  Adjust if necessary.

Note: figs are naturally sweet so don't add more sweetener until after you've already blended it so be sure it's not already too sweet.

Serve with grilled meats or on crackers or use on toast as any other jam.
