Fried Green Tomato BLTAs - GFCFSF

1/2 cup GF flour mix seasoned with 1/2 teaspoon each salt and pepper
1/2 cup fine corn meal
1 egg, beaten
1 large green tomato, sliced thick
oil for frying
bacon, cooked
avocado, sliced
mayo and mustard, as desired
lettuce
8 slices of GFCFSF bread, toasted - Udi's or Canyon Ranch are available nationwide

Lightly dredge tomato slices in seasoned flour, shake off excess. Coat in egg wash, then cornmeal. Bring oil to medium-high heat in pan, add tomatoes. Your goal is to brown the coating, rather than cook the tomato so this will be a fast process. Don't let the tomatoes burn. Remove to a paper towel lined plate while you assemble the sandwich.
