Frozen Banana-Nut Butter Pie - GFCFSF

Crust:
2 cups almond flour
1/4 cup melted coconut oil, plus 1 tablespoon for the pan
1/2 tsp salt
1/2 cup sugar

Filling:
5 large organic bananas, ripe (spotty)
3/4 cup organic nut butter of your choice
1-1/2 tablespoons of local organic honey

Chocolate sauce or Hot Fudge Sauce (optional)

For filling, peel and remove strings from bananas and slice into 1/4" slices. Repeat with all 5 bananas. Cover and freeze until frozen solid.

Preheat oven to 350° F. Grease a 9-inch pie pan with coconut oil. Combine the crust ingredients in a large bowl and mix until it resembles wet sand. Pack into pie pan, covering all edges. Bake for 10-15 minutes, or until golden brown on the edges. Allow to cool completely.

When bananas are frozen completely, add half to a food processor and process until smooth, add in remaining and process until smooth. Add in nut butter and honey and process until well mixed and smooth. Work quickly so the bananas don't melt because you'll lose volume. Scoop into cooled pie shell. Top with chocolate sauce, if desired, and refreeze until very firm.
