Ginger-Honey Carrots - GFCFSF
1 pound carrots, scrubbed
1 tablespoon coconut oil
1-1/2 tablespoons grated ginger (I use a microplane)
1 tablespoon honey
1 teaspoon fresh thyme, minced
Kosher salt and freshly ground pepper to taste
Preheat oven to 450 degrees F.
Mix together oil, ginger, honey, thyme, salt and pepper in a roasting pan. Add carrots and stir to coat. Cover and roast for 20 minutes. Remove cover and roast another 10 minutes or until carrots are tender.
