Ginger Lemonade Ice Pops - GFCFSF

I came across these Ice Pop baggies, called Zipzicles, from a friend's Facebook page and immediately placed my order. This recipe would work for any popsicle mold but these are a fun change for summer.

1 4-inch piece of fresh ginger, sliced
1 cup water
1 cup organic sugar
1 cup of lemon juice (16 tablespoons = about 8 lemons)
2 cups water

Peel and slice ginger. Place ginger in pot with water and sugar. Stir and cook on medium high until all sugar is melted. Remove from heat. Let sit until cool while ginger flavors the syrup. When room temperature, strain out ginger and discard. Add in lemon juice and water, stir well.

Using a funnel, fill Zipzicle bags (or popsicle molds) and freeze at least 6 hours. Makes 8 ice pops.
