Grass-fed Bison is very low in fat, high in protein and very healthy. Many grocery stores now carry this fresh in their meat sections, or you can get it from www.localharvest.org.
- Bison (Buffalo) steaks
- olive oil
- salt and pepper
Because Bison is very low in fat, you need to add a small amount of oil to cook it. Coat the steaks lightly with oil on both sides. Sprinkle both sides with salt and pepper.
Preheat grill to medium high heat. Grill for 4-6 minutes on each side, depending on size. Do not overcook. remove to plate and loosely cover. Let steaks sit for 10 minutes before slicing.
