Grilled Corn Side Salad

Grilled corn side salad - GFCFSF

 

  • 5 ears fresh corn
  • 1 large cucumber
  • 3-4 stalks celery
  • 2 large ripe tomatoes (or a dozen cherry tomatoes)
  • 1 cup fresh peas
  • 1/4 cup green onion
  • 1/2 lemon
  • Salt - to taste
  • Pepper - to taste
  • 1/4 cup Olive oil

 

Optional: for more protein - add garbonzo or white beans (fresh or 1 can - drained)

Note: variation and additions are nothing but GOOD!

  1. Clean and remove corn husk. Broil corn on high. Rotate 3-4 times for eight minutes on all sides of corn.
  2. Clean and cook peas
  3. Finely chop: cucumber, celery, green onion and tomatoes. Once corn in cool, remove from husk.
  4. Add all ingredients with juice from the 1/2 of lemon, salt, pepper and olive oil

 

Can serve as relish to a main course - BBQ is best. Or better yet - the next day add to a salad with home made hummus.
