Grilled Salmon and Artichokes
Grilled Salmon and Artichokes - GFCFSF
This is a super easy meal to make and all GFCFSF.
Artichokes - cut in half and boil 45 minutes. Remove and cool 5-10 until you can handle them. Clean out hair with a spoon. Mix balsamic vinegar, lemon, chopped garlic, chopped fresh rosemary, salt, pepper and olive oil. Place marinade in shallow pan, place artichokes cut side down in marinade for 20 minutes to 6 hours. Grill.
Salmon - Using Wild-Caught Alaskan Salmon only, mix chopped garlic, chopped fresh dill, olive oil, salt and pepper. Slather on salmon and grill until medium (still pink in the middle). 9I get my salmon from www.wildforsalmon.com, they ship via fedex)
Potatoes - wedge up russet potatoes. Toss with chopped garlic, chopped fresh rosemary, olive oil, salt and pepper. Bake at 350 for 35 minutes, turning 2-3 times during baking.
Zucchini - slice and lightly coat with olive oil, sprinkle with italian seasoning, grill.
