Guava BBQ Sauce - GFCFSF

A very versatile sauce that goes great with pork or chicken. You could use this sauce to grill or roast chicken breasts, thighs or wings or pork loin, tenderloin or chops too.

2 tablespoons oil
2 cloves garlic, minced
1 med red onion, sliced very thin
1/2 serrano* pepper, minced (remove all seeds for less heat)
3 tablespoons yellow pepper, minced
1 cup crushed pineapple, in juice
salt and pepper
1 cup guava paste or jam
2 tablespoons tomato paste

For sauce:
In 2-3 quart pan, heat oil to medium heat. Add onion, garlic, peppers, salt and pepper and stir well. Lower heat to medium low, cover and cook 30 minutes until onions are very soft, stirring occasionally. Add in pineapple, guava and tomato paste. Stir well and cover. Cook another 20 minutes. Re-season with salt and pepper if needed.

To use on baked chicken: Buy a whole chicken cut up, or cut it up yourself. Place cut up chicken in pan. Sprinkle lightly with oil, salt and pepper and 1 teaspoon thyme. Toss to coat evenly. Bake at 375 for 30 minutes, slather generously with guava sauce, cook for 10 minutes, re-baste with more sauce, cook until done.

*Cook's note: You can use habanero or jalapeno, whatever you prefer.
