Hot Pickled Onions - GFCFSF

1/2 small red onion, very thinly sliced
1 teaspoon jalapeño, thinly sliced
1 teaspoon sugar
3 Tablespoons Apple Cider Vinegar
1 clove garlic, sliced thin
salt and pepper

Mix all in bowl. Let sit 1-24 hours. Refrigerate if not using same day.
