Italian Zucchini


  • 1  medium zucchini, sliced
  • 1/4 cup onion, chopped
  • 1 clove garlic, chopped
  • 2 roma tomatoes, chopped
  • salt and pepper
  • 2 tablespoons olive oil


Heat oil in pan on medium heat.  Add zucchini and garlic, stir and cover.  Cook for 5 minutes, stirring occasionally.  Add remaining ingredients, stir and cover.  Cook until zucchini is translucent.


Note: you could add a teaspoon of thyme, basil, parsley or Italian seasoning mix if desired.
