Kat’s Daiya Enchiladas

  • Organic Corn Tortillas
  • Daiya Pepperjack Cheese
  • Frontera Red Chili Enchilada Sauce (or any other GFCFSF red sauce you may like but be careful as most have wheat in them)
  • Yellow Onion, chopped (optional)

 

Preheat oven to 400 degree.

 

Steam tortillas to soften and add 1/4 cup pepperjack Daiya, chopped onion, then roll in baking dish with end of tortilla facing down. Once done rolling all enchiladas coat with your red chili enchilada sauce. Sprinkle more Daiya on top then bake for 15 minutes.

 

I served mine with Bearitos Spicy Organic Refried Beans, and Guacamole (http://tacanow.org/family-resources/guacamole/) and chips.
