Lemon-Poppyseed Coconut Flour Waffles - GFCFSF/SCD

Makes 4 waffles

8 eggs
1/2 cup melted coconut oil, plus more for waffle maker
1/2 cup coconut flour
1 teaspoon lemon juice
1/2 teaspoon salt
2 tablespoons poppy seeds
1 tablespoon finely grated lemon peel
3-4 tablespoons honey

Beat eggs lightly. Mix all ingredients together well. Grease waffle iron with coconut oil and cook until done. Freeze leftovers, if any.

Top with Lemon Curd and Lemon Blueberry Sauce, if desired.
