Lisa's Pasta Salad

  • 1 Package of  GFCFSF pasta (rice, corn, garbonzo bean, quinoa), cooked and cooled
  • 1 can drained back olives
  • 1 can drained organic black or kidney beans
  • 5 tablespoons capers, rinsed
  • 1/2 cup organic frozen peas
  • 4 chopped organic green onions
  • 1 large organic chopped tomato
  • 1/2 organic red pepper
  • 3 stalks chopped celery
  • 1/2 chopped cucumber
  • Chopped marinated artichoke (more is better!)
  • (anything left in veggie drawer? Throw it in - especially left over BBQ'd veggies)
  • 1 tsp garlic salt
  • 1 tsp herbs de Provence
  • 1/2 tsp pepper
  • 1/4 cup organic olive oil
  • 1/4 cup balsamic vinegar

 

Mix altogether and enjoy!
