Lisa’s Phenol-Free Meatloaf
- 1 lb organic low fat ground beef or dark meat turkey
- 1 large zucchini (food processor pieces)
- 2 eggs or egg replacer
- 2 tbls baking powder
- 3/4 c organic corn flakes (also processed in the food processor or your favorite GFCFSF bread crumbs. Pictured are corn flakes)
- Salt and pepper, to taste
Hand mix all ingredients thoroughly. Place loaf in baking dish. Bake at 375 degrees for 50-65 minutes until cooked throughout. Yields 3-4 servings.
