Lisa’s Shrimp Scampi

  • 2 pounds shrimp, peeled and de-veined
  • 3 tablespoons Earth Balance Soy free margarine
  • 3 cloves garlic, chopped
  • Fresh parsley – to taste
  • Salt and pepper to taste
  • 1/4 cup chardonnay (optional)
  • 1/4 cup of fresh lemon juice (to taste)

 

Buy the best fresh shrimp possible – it ain’t cheap and it is worth it.  Knowing your butcher and calling ahead is required.  Do not buy can or frozen! We rarely cook seafood (2 times a year) and when we do it is the best we can find.

Rinse shrimp really well. Add Earth balance and garlic to a heated skillet and melt. Add in other ingredients and sauté 7-10 minutes until shrimp is the perfect color.

Serve as an appetizer or on top of rice or GF noodles. Yields for 4-5 servings.
