Mango-Ginger Salsa - GFCFSF

1 fresh mango, pitted, skinned and chopped small
3 tablespoons minced red onion
1 large clove garlic, minced
3 tablespoons chopped cilantro
1 teaspoon lime juice
3 tablespoons fresh ginger, minced
1/4 teaspoon salt
1 teaspoon seeded minced Serrano or jalapeno, or 1/2 teaspoon Habanero, seeded and minced *using gloves*

Mix all ingredients in bowl. Let sit 1+ hours in the refrigerator to meld flavors.
