Mango-Ginger Vinaigrette - GFCFSF

1 fresh mango, pitted and peeled
1 small shallot, peeled and cut in half
4 tablespoons fresh ginger, peeled and minced
the zest from 1 fresh lime
the juice from 1 fresh lime
1 tablespoon GF rice or white wine vinegar
3 tablespoons honey
1/4 teaspoon salt
1/4-1/3 cup olive oil

Place all ingredients except oil in blender and blend one minute, then slowly drizzle in oil with blender running. Blend until smooth. Taste and re-season, if needed.
