Marinated Roasted Sweet Peppers

Ingredients:

  • 2 large roasted peppers (red, orange, yellow, purple)
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • 1 clove garlic, chopped
  • 1/4 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1/4 teaspoon pepper
  • 1 tablespoon lemon juice

 

To roast peppers:

Place clean fresh peppers directly on the grill top over a medium flame. Turn the peppers frequently, as needed until the skin has turned completely black and starts to blister. When the entire pepper skin has turned black, remove the peppers from the grill and put them in a plastic bag and seal.  Let the peppers rest for 10-15 minutes. Shake the peppers in the bag until the skins loosen, they should slide off easily at this point. Cut the pepper in half to core and remove seeds. Slice as desired.

 

For marinade:

Mix everything together, add roasted peppers and let marinate in the fridge for at least an hour to overnight.
