Mediterranean Pasta Salad - GFCFSF

This is a VERY versatile recipe, you can use any meat (or no meat), and any vegetables that you like or have on hand. I tend to grill alot so when I think about making this, I'll grill the meat and veggies a day or two before along with that day's meal so assembly of this is fast and easy.

Grilled chicken
Grilled asparagus
Grilled portabella mushrooms
Grilled onion slices
Grilled red/yellow/orange peppers
Kalamata olives
Sundried Tomatoes, packed in oil or dried after being rehydrated in hot water
Steamed broccoli
Rotini/Spiral GF Pasta like (Tinkyada Spiral Pasta or Fresh RP Rotini Pasta

Light Vinaigrette
3 Tablespoons Red Wine Vinegar
2 cloves garlic, minced
2 teaspoons dried oregano
1 teaspoon dijon mustard
1/3 cup olive oil
Juice of half a fresh lemon
salt and pepper to taste

Cut up cooked meat and veggies into bite-sized pieces. Make vinaigrette. Boil pasta. Add olives, sundried tomatoes, Toss and refrigerate 2-12 hours, serve cold.

This is a perfect dish for a summer pot luck or party!
