Mexican Grilled Corn


I used to love getting "Mexican corn" from street vendors when I lived in California, and pre-diet.  This is the closest I can get without the Cotija cheese.  Super yummy.

  • 4 ears fresh corn
  • olive oil
  • 3 tablespoons GFCFSF mayonnaise - I use Hellman's Canola mayo
  • 1 teaspoon fresh lime juice
  • pinch garlic powder
  • pinch salt
  • pinch cayenne pepper, to your taste (more is better, you want to taste it)


Shuck corn and coat lightly with olive oil.  Grill until desired done-ness.

Mix mayonnaise, lime, garlic powder, cayenne, and salt in a small bowl and spread over corn while it's still hot.  A little goes a long way.
