Nut, Seed and Fruit Bars - GFCFSF

1 cup Brown Rice Syrup or Lyle's Golden Syrup (you can use honey, but the bars will not set up hard)
1/3 cup coconut oil
1 teaspoon cinnamon (optional)
1 teaspoon vanilla (optional)
2 teaspoons salt
10 cups of your favorite nuts, seeds, dried sulfite-free fruits:
Shelled Nuts: almonds, peanuts, walnuts, pecans, pistachios, etc
Shelled Seeds: pumpkin (pepitas), sunflower, chia, hemp, etc.
Fruits: black or yellow raisins, currants, blueberries, coconut, etc.

Grease a 9"x13" pan with more coconut oil. Preheat oven to 325 degrees. Combine syrup/honey in pot with coconut oil, cinnamon and vanilla. Stir and bring to a rolling boil. Stir continuously and boil for 5 minutes. Remove from heat. Combine nuts, seeds and fruits in large bowl, add salt. Pour syrup over and mix very well. Bake for 20 minutes. Remove from oven and let cool 10 minutes, then cut with VERY sharp, large knife. Then let sit until hard (about 2 hours) and break apart and wrap individually.
