Orange-Shallot Vinaigrette - GFCFSF
2 shallots, minced
3 tablespoons white wine vinegar
1 teaspoon Dijon mustard
3 to 4 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon fresh thyme, chopped
salt and pepper
Zest 1 orange, set aside.
Juice both oranges into a pot, heat on medium high until reduced by half.
Mix shallots and vinegar in bowl, set aside 10 minutes. Drain and discard vinegar.
Mix zest, garlic, thyme, shallots, salt and pepper. Add in orange juice once reduced. Whisk in oil.
