Orzo with Broccoli, Lemon and Pinenuts - GFCFSF

12 ounces GF orzo - corn or quinoa
1 head of broccoli, cut into small florets
3 cloves of garlic, minced
1/3 cup olive oil
zest from one lemon
1/3 cup pine nuts
salt and pepper

Fill a pot with water, add a heaping tablespoon of salt to water and bring to boil. Cook orzo to al dente. Drain, rinse in cold water and set aside.

In a steamer pot, cook broccoli until almost done. Remove from steamer and set aside.

In small frying pan, lightly toast pine nuts dry (do not add oil), shaking the pan often so they don't burn. Remove from heat.

In a large pot over medium heat, add oil and garlic, stirring often so it doesn't brown. Cook until garlic is soft, about 5 minutes. Add in pasta, salt and pepper. Mix very well. Add in lemon zest, pine nuts and broccoli. Stir well but gently so you don't break up the broccoli. Reseason with salt and pepper, if needed.
